Recipes For The Road

FOOD FOR THE ROAD....MADE EASY
Some members have requested that we start a member's cookbook. So if you have any favorite recipes that you'd like to share...here's a space to post your creations....Enjoy!
Ted's Favorite Chile Relleno Casserole
2- 7oz. cans Ortega Whole Chiles, washed and seeded
3/4 lb. shredded jack and cheddar cheese
4 eggs
4 T flour
1- 13 oz. can evaporated milk
1 lb. ground beef or sausage, seasoned and cooked
1- 7oz. can of green chile salsa
salt and pepper to taste
In a buttered 9 x 13 casserole dish, layer the chiles and cheese. Mix eggs in a blender, with flour, milk, salt, and pepper. Pour mixture over chiles and cheeses. Bake at 350 degrees for 35 minutes. Sprinkle beef and salsa on top. Bake 15 minutes longer. This recipe can be made ahead and reheated.

Lois Rocek's Crock Pot Baked Apples

6 to 8 medium baking apples... washed and cored
8 T butter
1 c brown sugar
1 c raisins
1 c pecans or walnuts
1 c granulated sugar
1/2 c water
1/2 t cinnamon
lemon juice

Peel apple top and down about 1/2 inch. Dip top in lemon juice. Mix softened butter with brown sugar, raisins and nuts. Fill apple cavities.

Microwave granulated sugar and water until sugar is melted. (clear simple syrup)

Pour a little in the bottom of crock pot. Place apples in pot. Pour remaining syrup over apples and sprinkle with cinnamon.

Cook on High for 4 hours.
