Put A Jazz Festival On Your Calendar in 2009....

Southwest LTV Roadrunner Diane Stricker would like to remind you of the Annual Three Rivers Jazz Festival at the gateway to the Sequoia National Park. The dates are April 17-19, 2009. We usually dry camp at the Lion's Club. Usually, there is no need to make a reservation. There is food on site and tickets can be purchased prior to the festival....or at the "door". In the past, free shuttles were available to transport you to other stages in the Three Rivers area. So put it on your calendar and watch for more news as the date gets closer. Summer Recipes....

From A Fellow Roadrunner....

Tropical Curry Chicken Salad

2 cups cubed chicken
1 cup chopped celery
1 cup mayonnaise
1/4 to 1 tsp curry powder
20 oz can of chunked pineapple
11 oz can mandarin oranges
2 large bananas
1/2 cup flaked coconut
salad greens (optional)
3/4 cup peanuts or cashews
1-2 cups mixed grapes

Mix mayonnaise, curry powder, celery and chicken. Cover and chill at least 30 minutes. Before serving, add the fruit and nuts. Serve with Sweet Onion Muffins.

Sweet Onion Muffins

1 1/2 cup all purpose flour
1/2 cup sugar
1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 cup finely chopped onions
1/2 cup melted butter
1 1/2 cup choppped walnuts

Combine in a bowl- flour, sugar, baking powder, and salt. In another bowl- beat the eggs, then add the onions until moistened. Fold in walnuts and butter. Fill greased muffin cups 3/4 full. Bake at 400 for 10-12 minutes (for minis) or 20-30 minutes (for regular size.) Test for doneness. Yields about 3 dozen mini muffins or a dozen regular muffins.
